Sounds like your wife is right on board - good for you!
FWIW: there was one "Jewish look" in girls in So Cal that WAS attractive. It was the Sandra Bullock look, who I don't think is minimally Jewish. I'm not an expert on women, being one myself, but I think their husbands are probably pretty happy. He will either date within the Jewish faith or demand conversion. However, some Jewish brunettes whose features approximated hers were living in the Southland and were sought after. They keep themselves in shape and have beautiful features. If he is the party with the most "leverage," then conversion will probably take place. In Hebrew School, they taught all of us little Jews that our people were God's "chosen people." They also taught us lots of other things, like how to read and write Hebrew, and which foods are kosher, but they didn't really do anything to prepare us for a lifetime of dating non-Jews.Probably because good Jewish kids are supposed to grow up and marry other good Jewish kids.
Whether or not you only date Jews is totally up to you, but non-Jews should definitely know a few things before getting into a relationship with a girl of the Hebrew faith.

Juliet Bravo, I'm in the same situation - only my husband is a little slower to want to convert. Still, he helped me put the mezuzot up and observes the Jewish holidays with me as much as he can.
He fasts on YK (started out because he wouldn't eat in front of me and now it's for another reason I think? However, I don't think he will formally convert any time soon, though.
